If you are craving fries and looking for a lower carb, lower calorie option—set yourself down at my kitchen bar. If hummus is thought to be the new Prozac, then baba ganoush—containing nasunin and anthocyanins is the newest heart health protector, brain fog lifter and antioxidant available. Add the cauliflower and your genes will purr.
Preheat oven to 425°F.
3 pounds turnips (you may call these Swedes )
2 tsp of your favorite oil (this can be reduced or omitted if using 2 tsp broth or aquafaba with parchment or a silpat).
1/3 cup grated Parmesan or 1T nutritional yeast (optional)
1 tsp each garlic powder, onion powder, smoked paprika
Large flake finishing salt or Kosher salt
Thickly julienne your turnips. Some persons might tell you to peel them but I like the taste the peel brings. Prepare your baking sheet parchment and spray your turnips with oil, broth or aquafaba. Oil and aquafaba will produce a crisper fry. Season with remaining ingredients. Bake for 20 minutes. Serve immediately.
