Simplified from another amazing Epicurious recipe.
6 jammy eggs (boiled, but with a softer, jammier center) (you could buy)
4-6 T unflavored rice vinegar
1 T honey, agave, maple syrup or equivalent swerve or truvia
1 T soy, coconut Aminos, tamari, even Ocean’s halo no soy or reduced sodium soy
1/4 cup olive or other mild oil
2 to 3 cloves minced garlic
1/2 tsp kosher salt (optional)
1 lb Brussels sprout and 1 bunch leafy kale. You will be Trimming and slicing or shredding the Brussels and removing the stalk and tearing up the kale. If this step seems like too much- Buy a bag of Trader Joe’s cruciferous crunch or another Brussel sprout style slaw. If you do not like kale or Brussels and you do not think this dressing or break the veg down enough to make it delicious, use another green vegetable that you like. Broccoli Or broccoli rabe or Napa cabbage would be delicious. Using a packaged slaw mix would make its super easy too.

1 cup store bought or homemade hummus (recipe below) or fork mashed chickpeas
Flaky salt
1 cup Crunchy, Powerful seeds
Mix vinegar, Honey, soy, garlic and 1/2 the oil. You could put this in a bowl or a Ziploc bag and massage it with your hands. Kale needs to rest 10-15 minutes to become delicious.
Prep your bowl by filling it 1/2 with greens, add a swoosh of hummus and 2-3 egg halves. Sprinkle crunchy, powerful seeds and drizzle remaining oil over the salad.
